Tired of turkey? Look for more at Local Roots
Thanksgiving is over, and you might have just regained your appetite after the big feast. If you’re looking for something other than turkey and all the usual accompaniments, it’s time to visit Local Roots Market and see what other seasonal delights are in store for you.Despite the coming of winter, you’ll still find plenty of fresh produce:
- potatoes and sweet potatoes
- onions, shallots, leeks
- a variety of squash
- dark, leafy greens
- turnips, rutabagas, beets, carrots
- cabbage, broccoli, cauliflower
- lettuce and other salad greens
- a variety of apples, plus cider
- Jerusalem artichokes
Of course, if you still have turkey on hand, you might try making something new from the leftovers:
Grandmother’s Hot Turkey Salad
4 cups cooked turkey, cubed
2 cups celery, sliced
1/2 cup green pepper, chopped
3 tablespoons grated onion
1/2 cup sliced almonds
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons lemon juice
1 cup mayonnaise
3/4 cup grated cheddar cheese
3/4 cup bread crumbs or crushed potato chips
Mix all ingredients except cheese and crumbs or potato chips. Put mixture in a lightly buttered casserole. Top with cheese and crumbs or potato chips. Bake in a 350 degree oven for 40 minutes. Serves 6-8.
Variations:
• If you have any cranberry relish, melt and use for topping when serving.
• If you have dressing left, substitute for cheese and crumb topping.
• If you have gravy left, substitute for half of the mayonnaise.
